Job Description
We are seeking a highly skilled and passionate Sushi Chef / Specialist Cook to join our esteemed culinary team in Manchester. This is an exceptional opportunity for an experienced professional dedicated to the art of Japanese cuisine, particularly sushi and sashimi. The successful candidate will be instrumental in maintaining our high standards of food quality, presentation, and hygiene. Key Responsibilities
- Prepare a wide range of sushi, sashimi, nigiri, and maki rolls with precision and artistic flair.
- Oversee the quality and freshness of all seafood and ingredients, ensuring compliance with health and safety standards.
- Manage and maintain the sushi counter, ensuring cleanliness and efficient workflow.
- Develop new and innovative sushi creations to enhance our menu offerings.
- Train and mentor junior kitchen staff, sharing expertise and best practices.
- Collaborate with the head chef and kitchen team to ensure seamless service during peak hours.
- Monitor inventory and place orders for sushi-related ingredients.
- Adhere to all food safety regulations and company policies.
Required Skills
- Proven experience as a Sushi Chef or Specialist Cook in a high-volume, quality restaurant.
- Exceptional knife skills and a deep understanding of fish preparation techniques.
- Extensive knowledge of traditional and contemporary Japanese sushi cuisine.
- Ability to work efficiently under pressure in a fast-paced environment.
- Strong attention to detail and a commitment to producing visually stunning and delicious dishes.
- Excellent understanding of food safety and hygiene standards.
- Fluency in English (verbal and written).
Preferred Qualifications
- NVQ Level 3 in Professional Cookery or equivalent culinary qualification.
- Experience working in a Michelin-starred or highly-rated Japanese restaurant.
- Knowledge of Japanese culinary terms and cultural practices.
- Ability to adapt to new recipes and kitchen systems quickly.
