Job Description

We are seeking a passionate and skilled Head Chef or Sous Chef to lead our kitchen team at Malmaison Brasserie in Livingston, Scotland. Key Responsibilities

  • Lead, inspire, and develop a high-performing kitchen team, fostering a positive and collaborative work environment.
  • Oversee all food preparation and cooking, ensuring consistent quality, presentation, and adherence to recipes and standards.
  • Manage kitchen inventory, ordering, and stock control to minimize waste and optimize profitability.
  • Develop and introduce innovative menu items and specials that reflect seasonal availability and guest preferences.
  • Ensure strict compliance with all health, safety, and food hygiene regulations.
  • Collaborate with the Restaurant Manager to achieve operational goals and enhance guest satisfaction.
  • Conduct regular performance reviews and provide ongoing training and mentorship to kitchen staff.
  • Manage kitchen budgets, labor costs, and operational efficiency.
  • Maintain a clean, organized, and efficient kitchen environment at all times.

Required Skills

  • Proven experience in a leadership role within a high-volume restaurant or hotel kitchen (Head Chef or Sous Chef).
  • Strong culinary skills with a deep understanding of various cooking techniques and international cuisines.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to work effectively under pressure and manage multiple priorities.
  • Thorough knowledge of food safety and hygiene regulations (HACCP certification preferred).
  • Creativity and passion for developing innovative and delicious dishes.
  • Strong organizational and problem-solving abilities.

Preferred Qualifications

  • NVQ Level 3 or equivalent culinary qualification.
  • Experience with fine dining or high-end brasserie concepts.
  • Prior experience working in the UK hospitality sector.
  • Proficiency in inventory management software.
  • Ability to speak multiple languages is a plus.
