Job Description

We are seeking a highly skilled and passionate Commercial Baker / Pastry Chef to join our thriving team in Bristol. This is a unique opportunity for an experienced professional to contribute to a renowned artisanal bakery known for its quality and innovation. The ideal candidate will have a strong background in high-volume, quality-focused baking and pastry production. Key Responsibilities

  • Prepare and bake a wide variety of artisanal breads, pastries, cakes, and other baked goods according to Gail's Bakery's recipes and quality standards.
  • Manage daily production schedules to ensure timely delivery of fresh products for retail and wholesale demands.
  • Operate and maintain bakery equipment safely and efficiently, including ovens, mixers, and proofers.
  • Monitor inventory of baking ingredients and supplies, placing orders as needed and minimizing waste.
  • Ensure strict adherence to food safety, hygiene, and sanitation standards in all production areas.
  • Collaborate with the head baker and kitchen team to develop new recipes and improve existing ones.
  • Train and mentor junior bakery staff, fostering a positive and productive work environment.
  • Maintain a clean, organized, and efficient workstation throughout the shift.
  • Monitor product quality, appearance, and consistency, making adjustments as necessary.

Required Skills

  • Proven experience as a Commercial Baker or Pastry Chef in a high-volume production environment.
  • In-depth knowledge of baking techniques, including dough preparation, proofing, baking, and decorating.
  • Proficiency in producing a wide range of breads (sourdough, yeasted, enriched), pastries (croissants, pain au chocolat), and cakes.
  • Strong understanding of food safety regulations and best practices (HACCP preferred).
  • Ability to work efficiently under pressure and meet tight deadlines.
  • Excellent attention to detail and a passion for producing high-quality products.
  • Good communication and teamwork skills.
  • Flexibility to work early mornings, evenings, weekends, and holidays as required.

Preferred Qualifications

  • Culinary arts degree or diploma with a specialization in baking and pastry.
  • Experience with artisanal and European baking techniques.
  • Previous experience working in a similar high-end bakery or restaurant.
  • Ability to innovate and contribute creative ideas to our product range.
