Job Description
We are seeking a highly skilled and passionate Sushi Chef / Specialist Cook to join our dynamic culinary team in Stonehaven. This is an exceptional opportunity for a talented individual with extensive experience in traditional Japanese sushi preparation and presentation. You will be responsible for creating high-quality sushi, sashimi, and other Japanese delicacies, ensuring authenticity, consistency, and a memorable dining experience for our guests. This role supports a Skilled Worker Visa for eligible international candidates, demonstrating our commitment to attracting top global talent. You will work closely with our head chef and kitchen team, contributing to menu development and maintaining our high standards of food safety and hygiene.
Key Responsibilities
- Prepare a wide range of sushi, sashimi, nigiri, and maki rolls with precision and artistic presentation.
- Ensure the highest standards of food quality, freshness, and consistency.
- Manage and maintain a clean, organized, and efficient sushi bar and work station.
- Monitor inventory, order supplies, and minimise waste.
- Adhere strictly to all food safety and hygiene regulations.
- Collaborate with the kitchen team to develop new menu items and seasonal specials.
- Train and mentor junior chefs and kitchen staff on sushi preparation techniques.
- Maintain a positive and professional attitude in a fast-paced environment.
Required Skills
- Proven experience as a Sushi Chef or specialist Japanese cook (minimum 4 years).
- Expertise in traditional Japanese knife skills and fish preparation.
- In-depth knowledge of various sushi types and ingredients.
- Strong understanding of food safety, hygiene, and sanitation practices.
- Ability to work efficiently under pressure and in a high-volume setting.
- Excellent attention to detail and artistic presentation skills.
- Good communication and teamwork abilities.
Preferred Qualifications
- Culinary degree or relevant certification.
- Experience with other Japanese cooking techniques (e.g., tempura, teppanyaki).
- Fluency in Japanese (conversational level for kitchen communication).
- Previous experience in a visa-sponsored role or international culinary environment.
